I'm planning to make an special dinner for my friends, kaiseki styled. But I have some questions about the ingredients. Can you help me to choose the plates for the menu (january) according to seasonality?

I don't pretend to make a real kaiseki, I understand how complicated it is, I just want to offer an special dinner as similar to a real one as possible. :)
